The former Oxford Abingdon Hotel is currently undergoing a comprehensive redevelopment, increasing the number of guest rooms by over 100% through a new four story extension. The hotel will become the Hilton Garden Inn, Abingdon and will be fully open by early 2019. The new extension will include a lounge bar, restaurant, function rooms and fitness centre. The existing hotel is open throughout the extension works, and current bedrooms will be fully renovated.
We are now recruiting on behalf of the hotel owners for a full time Restaurant & Bar Manager to join the relaunch team. The Restaurant & Bar Manager will work closely with the Operations Manager and General Manager as part of the opening/relaunch team.

The main purpose of the role is to take control and responsibility for the smooth and efficient operation of the food & beverage operations departments:
Ensuring facilities are maintained to the standards required and the departmental budgeted profitability is achieved and to develop a cohesive and trained team who are able to provide superior guest service and maximise revenue.

Role Responsibilities

• Ensure achievement of budgeted profitability of all F&B operational departments under your control;
• Utilise food & beverage personnel between all outlets to minimise payroll expenditure and ensure flexibility of the team;
• Ensure all employees receive regular training to update their skills and knowledge and meet their own personal development needs;
• Maximise the service opportunities for guests to ensure return visits;
• Streamline F&B and C&B standard operating procedures;
• Encourage the team to work flexibly, which will develop their knowledge and assist in the event of absence cover, and allow service standards to be maintained;
• Act as Guest Services Manager, on duty, as required, ensuring a professional and friendly service throughout the hotel;
• Ensure departmental meetings are held monthly;
• Ensure that every employee receives induction training over their first 11 weeks of employment and a hotel induction;
• Produce a departmental training plan, action the training and evaluate to ensure that the training is relevant and achieves the required outcome;
• Carry out departmental appraisal reviews in a timely and appropriate manner;
• Ensure that the team is constantly improving their product knowledge to maximize revenue and the service provided;
• Work within the departmental budget figures, maximising revenue and minimising expenditure;
• Ensure routine maintenance is carried out in your areas of responsibility, reporting any damage, wear and tear;
• Set up and organise on-going departmental cleaning schedules;
• Directly co-ordinate the activities of the food & beverage outlets, thus ensuring high standards of cleanliness and service are maintained throughout in order to reflect the brand standards on all occasions;
• Ensure the whole team is aware of liquor legislation and receives food hygiene training relevant to their position;
• Understand your role and responsibilities in terms of the hotel Health & Safety Policy;
• Produce and update departmental risk assessments and train the team against them. Ensure the assessments are reviewed in the event of an accident occurring;
• Work with the Housekeeper to ensure all linen is correctly used and that specialist cleaning is carried out as required;
• Comply with statutory and legal requirements for fire, health and safety, hygiene, liquor licensing, disability and employment laws and ensure that all members of your team are trained accordingly;
• Produce departmental forecasts as required and communicate figures to the team to aid their understanding of the business and the importance of their contribution to the business success;
• Review and report on the financial monthly performance of all areas of responsibility and be able to account for the variances;
• Ensuring a system is in place for ordering, delivery, storage, security, distribution and administration of food & beverage items;
• Be fully aware of and control departmental operating costs in line with forecasted business levels;
• Be fully aware of departmental budgeted and actual payroll costs and manage costs by allocating labour resources in line with forecasted business levels;
• Control all china and cutlery stocks and levels, ensuring costs are controlled in accordance with hotel procedures;
• Schedule monthly stock takes and ensure beverage cost of sales are in line with budgeted figures;
• Develop food and drink packages/promotions to encourage business and build the reputation in the local business and leisure markets and to evaluate the results of each promotion/package;
• Prepare the food and beverage sales and marketing plan in conjunction with the Director of Sales and Marketing;
• Directly co-ordinate the breakfast and room service operations

Role Requirements

• Experienced food & beverage specialist in a quality establishment, for a minimum of 2 years;
• Experience of opening or relaunching a business is desirable.
• Previous experience as a line manager in one or more specialist areas;
• Ideally to have experience in conference & banqueting, restaurant and bar operations;
• Hotel background an advantage;
• Standards orientated with an eye for detail;
• Firm manager of teams, leading a team of 10 plus personnel;
• Evidence of cost control and purchasing;
• Knowledge of health & safety and current legislation;
• Communicator with peers and subordinates;
• Influencer at all levels and able to get employee buy in to operating practices;
• Able to demand results from line managers; and
